At Fire & Folk, we honor the tradition of authentic Neapolitan pizza, a time-honored craft where simple ingredients meet fire and patience. Our carefully crafted and fermented dough, inspired by the classic poolish method, results in a crust that’s both light and flavorful.
The Neapolitan Pizza Experience
Neapolitan pizza is known for its delicate balance of textures—a soft and tender interior with a slight crunch on the edges. The airy crust, blistered by intense heat, develops a smoky aroma and a charred kiss, giving it a complexity that can’t be replicated in a conventional oven. Each pizza is stretched by hand, topped with fresh ingredients, and baked at over 800°F in our wood-fired oven, ensuring a perfect balance of chew and crispness.
What is Panuozzo?
Born from the same dough, panuozzo is the Neapolitan take on a sandwich—a fire-baked bread that puffs up like a pizza but is sliced open and filled with delicious ingredients. The high heat of the wood-fired oven gives it a light, crispy exterior while keeping the inside tender, making it the perfect vessel for smoky meats, fresh greens, creamy cheeses, and vibrant sauces. It’s a sandwich, but elevated.
Why Wood-Fired?
There’s a reason wood-fired ovens have been used for centuries. The intense, even heat creates flavors and textures that no other method can match. The flames lock in moisture while caramelizing the crust, creating a perfect bite—whether it’s pizza or panuozzo. It’s not just cooking; it’s an art form, and it’s the soul of what we do at Fire & Folk.
Here’s the Moveable Feast Philosophy:
The Moveable Feast lives up to its name by incorporating a variety of cultural influences from around the world into the menu. We work out of a in a fully licensed 1969 Airstream kitchen custom designed to serve food in a variety of locations for any occasion. We make our own versions of the classics, a fusion of tastes designed for take home, for events, outdoor dining and on-the-go meals. Some menu items are a modern day take on old time favourites like good old fashioned burgers with all the trimmings.
We want to give our customers the best value possible by reducing overhead and packaging costs. As part of that goal we use every option available to keep staffing and packaging to a minimum. We use compostable cups, cutlery and wrappers- even the lids are green bin friendly. We try our best to focus on preparing great food at the best possible prices while minimizing time spent at the window.
We’ve come up with some innovative ideas to keep the orders flowing, and ask that customers use our online self-service option if they know what they want or have limited time. This is also a great option for groups who want to have all their food ready at the same time. We keep the online menu updated daily and even up to the minute on the rare occasion when we run out of an item.
You can order on line, in line or from your table even if there’s a lineup at the window
Orders placed on line will be filled in priority order. In other words, if we’re busy speaking to other customers at the window and you place an order on your phone or other device that order will be filled before the one placed at the window based on the time stamp. If you’re reading this in your car because you checked out the QR code on a sign you can place an order now and it will probably be ready by the time you get to Silva Bay!
We encourage on line ordering, particularly if you’ve looked at the menu and know what you’d like. In fact, if you’ve ordered a soft drink or water you can even pick that up while waiting for your meal. Just go round to the other side of the trailer and you’ll find the drinks in the outdoor fridge. We’re still working on the honour system that was a hallmark of the times when the 1969 Airstream was brand new. We like to make sure you get a cold drink while you wait and our staff can stay focused on preparing great food with minimal time taking orders and payment.
Here’s Where You Come In
Individuals and groups can order while seated at a table or orders can be placed days in advance. In that case you can choose a pick up date and time. If you’re part of a group at a table you can place individual orders if you want to pay separately or place one order to be sure that everything is ready at the same time. You can also put a note on individual orders, identifying the group you’re with- just choose a name that everyone can use- and we’ll do our best to prepare all that group’s orders together.
Of course, group orders can be placed together at the window and the ticket can be split into separate bills or paid by one member of the party. Whether an individual or group, please have your orders and payment ready when you are being served.
We can accommodate large groups, however ask that groups of 10 or more order well in advance to be sure that your meals arrive on time and that everyone is served together.

We’ve chosen SquareUp to host our on line and window orders as a way of streamlining our system. Orders placed on line or at the window are received in the kitchen- as if by magic- via a time stamped method that provides us with all the details. Please feel free to use the comment box to relay specific information to the kitchen. We use the first name on your order to let you know when it’s ready.
